Beer? Not so much, with one exception: Germany\u2019s gose (pronounced <em>goes-uh<\/em>), an ancient wheat quaff with a refreshing tartness (and yes, briny kick). Consider it a killer electrolyte replenisher on a sweaty summer afternoon.<\/p>\n<p>When used in cooking, salt sharpens and stitches together disparate flavors\u2014it\u2019s an essential ingredient. Germany\u2019s centuries-old gose, however, did not come from a recipe but rather happenstance. The beer\u2019s origins can be traced to the 16th century in Goslar, a mining town in northwest Germany, where the mineral-rich waters of the local Gose River supplied the tipple with its name and signature sodium chloride. (Ambient bacteria created the tart edge during spontaneous fermentation.)<\/p>\n<p>By the 1700s gose\u2019s popularity had spread east to Leipzig, where residents dug the acidic, salty quaff and began brewing their own versions. The style soldiered on until the 1940s, when the government shuttered the last brewery during World War II. Four decades later gose slowly stirred from the grave, thanks to Leipzig bar owners and breweries\u2014especially Gasthaus &amp; Gosebrauerei Bayerischer Bahnhof, situated in the city\u2019s landmark train station. The revival\u2019s slow German simmer became a full American boil as stateside brewers cottoned to the low-ABV style\u2019s approachable tartness and dry finish\u2014perfect for drinkers tiptoeing into sour waters. (These days the pucker typically comes from the bacterium <em>Lactobacillus<\/em>, while salt is manually added.)<\/p>\n<p>Over the past five years, gose has gone from antiquity to ubiquity, a fast rival to lemonade as a summertime sipper. South Carolina\u2019s <a href=\"http:\/\/westbrookbrewing.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Westbrook<\/a> was one of the first US breweries to embrace gose, debuting bottles of its coriander-laced riff in 2012 (it\u2019s now canned). While classically inspired examples abound, such as <a href=\"http:\/\/www.offcolorbrewing.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Off Color Brewing<\/a> Troublesome and sea salt\u2013tinged <a href=\"http:\/\/lostnationbrewing.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Lost Nation Brewing<\/a> Gose, US brewers have treated gose as a trampoline for tasty experimentation. <a href=\"http:\/\/www.victorybeer.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Victory Brewing Company<\/a>\u2019s Kirsch Gose brims with cherries, <a href=\"https:\/\/www.odellbrewing.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Odell Brewing Company<\/a>\u2019s Brombeere boasts blackberries, and <a href=\"http:\/\/eviltwin.dk\/\" target=\"_blank\" rel=\"noopener noreferrer\">Evil Twin Brewing<\/a> and <a href=\"https:\/\/tworoadsbrewing.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Two Roads Brewing Company<\/a>\u2019s Two Evil Geyser Gose is agog with Icelandic moss and sea kelp.<\/p>\n<h2>How to Pair<\/h2>\n<p>Tread carefully: NaCl-dosed gose will unpleasantly amplify an already briny cheese such as feta or halloumi. Instead, reach for a fresh goat cheese such as Ch\u00e8vre d\u2019Argental or <a href=\"https:\/\/culturecheesemag.com\/cheese-library\/Chevre-Rawson-Brook\" target=\"_blank\" rel=\"noopener noreferrer\">Rawson Brook Farm Monterey Ch\u00e8vre<\/a>, which achieve tangy harmony with the beer. For a different direction, seek out creamy burrata from Vermont\u2019s <a href=\"https:\/\/culturecheesemag.com\/cheese-library\/Burrata-Maplebrook-Farm\" target=\"_blank\" rel=\"noopener noreferrer\">Maplebrook Farm<\/a> or Dallas-based <a href=\"https:\/\/culturecheesemag.com\/cheese-library\/Burrata-Mozzarella-Co\" target=\"_blank\" rel=\"noopener noreferrer\">Mozzarella Company<\/a>. The beer\u2019s biting quality slashes through richness, while the salinity rounds out the cheese\u2019s buttery depth.<\/p>\n<h2>Five to Try<\/h2>\n<h3><a href=\"http:\/\/www.almanacbeer.com\/ourbeer\/golden-gate-gose\/\" target=\"_blank\" rel=\"noopener noreferrer\">Almanac Beer Co. Golden Gate Gose<\/a><\/h3>\n<p>The Bay Area brewery uses San Francisco Bay sea salt and locally grown lemon verbena and coriander in this complex formulation that screams for a sunny picnic.<\/p>\n<h3><a href=\"https:\/\/avbc.com\/our-beers\/blood-orange-gose\/\" target=\"_blank\" rel=\"noopener noreferrer\">Anderson Valley Brewing Company Blood Orange Gose<\/a><\/h3>\n<p>Plenty of crimson citrus added during fermentation turns Anderson Valley\u2019s bubbly, zesty gose into a mimosa-like morning reviver.<\/p>\n<h3><a href=\"http:\/\/www.sierranevada.com\/beer\/year-round\/otra-vez\">Sierra Nevada Brewing Co. Otra Vez<\/a><\/h3>\n<p>Prickly pear cactus and grapefruit provide Otra Vez with a breezy, fruity flair.
