In the UK, an old custom advises slicing the top off a wheel and upending a bottle of port into the paste, where it slowly drains through the fissures for two or three weeks. Yet even with a less dramatic presentation, Stilton is worthy of attention. Made entirely from cow\u2019s milk sourced from three English counties, the tall cylinders stand apart for their loose crumb and creamy white paste striated with blue-green lines of <a href=\"http:\/\/culturecheesemag.com\/cheese-iq\/new-kind-blue-cheese-need-try\" target=\"_blank\" rel=\"noopener noreferrer\"><em>Penicillium roqueforti<\/em><\/a>. Those crumbs melt into a rich, buttery texture on the tongue and carry a wallop of flavor: smoky, nutty, and savory, with a bright acid tang.<\/p>\n<p>But what to drink with such a commanding cheese? Stilton\u2019s powerful flavor might suggest a big, dry red, but don\u2019t do it: The sharp bite and fragile texture that differentiate Stilton styles from moister blues (such as Roquefort and Gorgonzola) will accent the astringency of the wine\u2019s tannins. Grapes like gamay and pa\u00eds have naturally low levels of tannins as well as plenty of fruit flavor to play off the tang of the crumbly blue.<\/p>\n<p><strong>Try:<\/strong><br \/>\nChehalem 2016 Ridgecrest Vineyards Gamay Noir<br \/>\nA Los Vi\u00f1ateros Bravos 2015 Itata Volc\u00e1nico Pa\u00eds<\/p>\n<h4>Sweet Whites<\/h4>\n<p>Think of foods that taste good with blues: dried apricots, figs, dates, and nuts. All those flavors appear in the golden, sweet Tokaji wines of Hungary. The most luscious are labeled \u201cAsz\u00fa,\u201d with a number from 2 to 6 that denotes their sweetness (6 being the richest), but late-harvest wines can offer a similar range of flavors at a more affordable price.<\/p>\n<p><strong>Try:<br \/>\n<\/strong>Patricius 2013 Tokaji Asz\u00fa 5 Puttonyos<br \/>\nTokaji Classic 2007 Tokaji Late Harvest Classic Cuv\u00e9e<\/p>\n<h4>Sherry<\/h4>\n<p>Food and wine writer Francis Percival looks for caramel-sweet flavors\u2014<a href=\"http:\/\/culturecheesemag.com\/cheese-pairings\/beer-cheese-grape-expectations\" target=\"_blank\" rel=\"noopener noreferrer\"> barley wine<\/a>, Islay whiskey\u2014when pairing booze with Stilton.
