Produced at Switzerland\u2019s K\u00e4serei Studer, the \u201cFeisty Bull,\u201d as it is often dubbed in the US, was developed by innovative cheesemakers eager to experiment with new products after the 1999 collapse of the <a href=\"https:\/\/culturecheesemag.com\/cheese-bites\/a-brief-shady-history-of-fondue\" target=\"_blank\" rel=\"noopener\">Swiss Cheese Union<\/a> (a government agency that strictly limited the country\u2019s cheese production for much of the 20th century).<br \/>\n&nbsp;<br \/>\nThe raw cow\u2019s milk wheel is complex and pleasantly funky, with savory, oniony notes balanced by the richness of cream added during the make process. <em>Scharfe<\/em> translates to \u201csharp\u201d\u2014not only a nod to the cheese\u2019s pungency, but also a cheeky reference to the nickname for one of the original cheesemakers (the word can also mean \u201chorny\u201d).<br \/>\n&nbsp;<br \/>\nThe red bull image was created after an earlier design by an outside agency was deemed not \u201cstrong\u201d enough. \u201cWhen [a cheese] is so different, why not be really different?\u201d says marketing manager Beate Fussenegger. \u201cOther products on the market were associated with cows, hayfields, and mountains.
