If you\u2019re anything like me, you\u2019re the friend who will find any excuse to bring cheese to a gathering. Cheese is versatile, and it\u2019s equally as appropriate for casual parties as it is for holiday shindigs. And it\u2019s always welcome at the ultimate summer affair: a cookout.<\/p>\n\n\n\n

Oftentimes cookouts include slices of American or Swiss on burgers, cubed grocery store cheddar on a fruit platter, or maybe a piping-hot baked Brie (if you\u2019re lucky). To stretch your cookout cheese-pairing prowess, we tapped Zach Sievers, ACS CCP, of Zingerman\u2019s Delicatessen<\/a> in Ann Arbor, Michigan, for cheese recs.<\/p>\n\n\n\n

Sievers is intentional when balancing heavier grilling classics with delicate food. \u201c[Cheese] should play with grilled and smoked meats as well as veggies,\u201d he explains. \u201cCookouts tend to be heavy, so bringing some acidity with cheese tends to be the way I go.\u201d<\/p>\n\n\n\n

If you\u2019re inspired but unsure where to start, remember that cheesemongers are more than happy to guide you. \u201cI really value building relationships over the counter. So if someone is not certain, I slowly introduce them to cheese that is just slightly different than their expectations,\u201d Sievers explains. \u201cOnce they love that first bite, it gets easier to introduce people to different flavors and textures that are more interesting.\u201d<\/p>\n\n\n\n

Don\u2019t be afraid to introduce your friends to something unexpected. Whether at a backyard kickback or Sievers\u2019 ideal summer hang \u201cnear some dunes in Northern Michigan,\u201d these five cheesy cookout collabs are sure to be a summer hit.<\/p>\n\n\n\n

Feta PDO<\/a><\/strong> + Pickled Watermelon <\/strong>
Origin: Greece<\/em> | Milk: Pasteurized Sheep<\/em><\/p>\n\n\n\n

There are a million ways to serve feta at a cookout\u2013 my favorite is with pickled watermelon. They\u2019re lovely briny little bites that are just as perfect with any grilled or smoked meat as an ice-cold drink.<\/p>\n\n\n\n

Bellwether Farms Whole Milk Basket Ricotta<\/a><\/strong> + Grilled Apricot <\/strong>
Origin: Sonoma County, California<\/em> | Milk: Pasteurized Cow<\/em><\/p>\n\n\n\n

My go-to cookout dessert is fresh grilled stone fruit, such as apricots. Top with Bellwether Farms ricotta and a touch of olive oil, and it\u2019s a taste of summer I dream about all year long.<\/p>\n\n\n\n

Hornbacher Little Brother<\/a><\/strong> + Smoking Goose Caraway and Kolsch Bratwurst<\/strong>
Origin: Switzerland<\/em> | Milk: Raw Cow<\/em><\/p>\n\n\n\n

Thinly shave Little Brother on top of the bratwurst hot off the grill. The younger age profile of Hornbacher from Michael Spycher has a fudgy texture, and onion notes make it a dream combo with caraway-forward bratwurst from Smoking Goose.<\/p>\n\n\n\n

Capriole\u2019s Sofia<\/a><\/strong> + Grilled Eggplant with Garlic and Herbs<\/strong>
Origin: Greenville, Indiana<\/em> | Milk: Pasteurized Goat<\/em><\/p>\n\n\n\n

This ash-ripened, citrusy, and dense goat’s milk stunner highlights rich and herbaceous grilled eggplant for a zingy dinner prelude.<\/p>\n\n\n\n

Finca Pascualete Retorta<\/strong> <\/a>+ Crudit\u00e9s<\/strong>
Origin: Spain<\/em> | Milk: Raw Sheep<\/em><\/p>\n\n\n\n

Instead of pairing ranch or other dips with your crudit\u00e9s, use this cheese instead! Lightly grill this custardy sheep\u2019s milk cheese, remove the top, and serve as the centerpiece on a veggie-lined tray. The large format cheese is great for a party, or get the mini version for a smaller group.<\/p>\n\n\n\n
